Perfect Dessert!


Burnished Chocolate Cookies


Ingredients:

4 Egg Whites

2 1/2 Cups Confectioners Sugar

1 Cup Unsweetened Cocoa Powder

2 Tbsp All-Purpose Flour

1 1/2 Tsp Instant Coffee

1 Tbsp Water

Instructions:

Heat your oven to 350 degrees. Line your cookie sheets with parchment paper, this is a MUST for this recipe, or you won't be able to get the cookies off of the cookie sheet. Sift together the dry ingredients over a bowl and set aside. Add the egg whites to your mixer bowl and beat until they foam, about 2-3 minutes on medium-high speed. Turn off the mixer, pour in the dry ingredients and mix on low until combined. Add the water, turn the mixer up to medium speed and beat until the batter is thick and shiny - just a few minutes. This batter will be like glossy sludge. Scoop by tablespoon full onto cookie sheet and bake for 10 minutes. Cool on parchment on wire racks. After 5 minutes of cooling, carefully peel cookies off parchment and allow to cool completely on wire rack. This recipe makes about two dozen cookies.
