Perfect Dessert!


Burnished Chocolate Cookies


Ingredients:

4 Egg Whites

2 1/2 Cups Confectioners Sugar

1 Cup Unsweetened Cocoa Powder

2 Tbsp All-Purpose Flour

1 1/2 Tsp Instant Coffee

1 Tbsp Water

Instructions:

Heat your oven to 350 degrees. Line your cookie sheets with parchment paper, this is a MUST for this recipe, or you won't be able to get the cookies off of the cookie sheet. Sift together the dry ingredients over a bowl and set aside. Add the egg whites to your mixer bowl and beat until they foam, about 2-3 minutes on medium-high speed. Turn off the mixer, pour in the dry ingredients and mix on low until combined. Add the water, turn the mixer up to medium speed and beat until the batter is thick and shiny - just a few minutes. This batter will be like glossy sludge. Scoop by tablespoon full onto cookie sheet and bake for 10 minutes. Cool on parchment on wire racks. After 5 minutes of cooling, carefully peel cookies off parchment and allow to cool completely on wire rack. This recipe makes about two dozen cookies.

ICT Policies and Strategies in Asia Pacific Region


The ICT Policies and Strategies in countries like New Zealand, Australia, Malaysia, Singapore and Hongkong are very remarkable. New Zealand has the world's highest access to telecommunications per capita, with the cost of accessing the Internet being almost as low as it is in the United States. Australia with its vast territories and dispersed population has long been known for its successful distance education programmes to provide education to those who live in remote places in the outback. More recently, Australia has become a pioneer in using ICT for educational purposes. Malaysia is making every effort to steer the economy towards a knowledge-based one. Singapore created Master plans since 1997 for their IT in Education. They believed though that teachers are the key to the effective use of IT to enhance teaching and learning.On the other hand, Hongkong aims to harness the power of ICT to turn schools into dynamic and innovative learning institutions, where students can become more motivated, inquisitive, creative and independent lifelong learners... 

I read all these info from the UNESCO website . Indeed, with what I have read, I am hoping that someday, our beloved Philippines can cope up with those countries that are more advance and come up with our own effective policies and strategies in the field of Information and Communication Technology...

Peanut Butter Chicken With Mandarin Cashew

Oops.. am not really sure with the pic.. but it looks so yummy... try this at home...

Ingredients:

4 boneless skinless chicken breast halves, cut into cubes

3 Tablespoons peanut butter,

(I used crunchy)

1/4 cup soy sauce

1 Tablespoon honey

1 Tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon ground ginger

1/4 teaspoon cayenne pepper

6 cups bite-size Romaine lettuce

(I used lettuce)

1 red pepper, julienned

3 green onions, or onions, chopped

1/4 cup fresh cilantro leaves, minced

( i used parsley)


Dressing:

1/3 cup chopped cashews

1 cup mandarin oranges, drained

Instructions:

1. In a small glass bowl, whisk together peanut butter, soy sauce, honey, olive oil, garlic powder, ginger, and cayenne pepper. Microwave on High 1 minute.

2. Place chicken in baking dish and pour peanut butter sauce over. Bake at 350 degrees (175C) oven.

3. In a large bowl, place lettuce, red pepper, onions, add chicken and toss to mix well. Pour Dressing over mixture and toss gently to coat. Garnish with cashews and mandarin oranges.

Makes 4 servings.


Dressing:

Whisk together 1/2 cup italian salad dressing, 1/2 teaspoon ginger, 1 Tabelspoon soy sauce and 1 teaspoon garlic powder.

Note:

I did NOT use cilantro, i don't really care for it, i replaced it with parsley.

Next time, I will stir fry the chicken, that is faster. I used crunchy peanut butter, my all time favorite.
